Not likely any legal action you can take. It was your choice to quit the other job. Sorry the new one didn't work out for you. But unless you have some kind of contract with the new guy that he violated, you have no legal action available.
If there was an oral agreement which set a ceiling of $750, and there were witnesses to this oral agreements, you may have a chance to recover this amount in a Small Claims action in California.
