There is no "flow of traffic" defense.
If you were over the speed limit, you are guilty of speeding. Just because other people were also speeding does not make it okay that you were doing so.
If you want to "beat" the ticket, you will need evidence that you were not speeding. If you cannot introduce any such evidence, then you will probably lose the case.

The officer can only stop one car at at time.
You can accelerate up a hill without exceeding the speed limit.
What you would be telling the judge is, "Everybody else was speeding, so I should get to speed as well."
I don't think that one will work.

The "flow of traffic" defense doesn't wash in traffic court. Accelerating up a hill won't help either

That argument is what is known as a "confession." The law doesn't prohibit speeding unless everyone else is doing it. It prohibits speeding. You can question the officer's ability to observe but the fact that others were speeding means nothing.
I recall several people speeding. One got pulled over. The driver asked the cop, "why did you stop me as opposed to all the others?" The cop replied "you were the one that stopped."

If you were exceeding the speed limit, it doesn't matter what the other vehicles were doing.
Nobody's questioning your acceleration or going uphill - that's not the violation. The speed is the violation. Yes, you could make the claim - but it will not help you one bit.
