I was intrigued by the premise of your question and the difficulty of providing an answer that might lead you to the possibility of a different point of view concerning the opportunity your mother is trying to give you and your reservations about it.
I began to craft my response by thinking about how I might feel if your situation were happening to me instead of you. The fact you did not identify your country in your question's details made thinking about what might be at stake a little more difficult but I will forge ahead with points worth pondering anyway.
The one thing most consistent about life and the living of it is that it is full of adventures and comes with no guarantees. No matter what we do, there is risk involved. But this is as it has been since the dawn of man and that will never change. Risk will always be the constant companion of all who dare to strive forward into an unknown.
It is a good thing you have the best interests of your family in the back of your mind as you contemplate where to direct their futures but one would hope you will consider their feelings as well as your own before making a decision on this all important question.
The unstated reservation I see hidden in the wording of your question is a wonderment over whether or not the myth of American living as seen by foreigners is true or not. Life here is, as it is everywhere else, subject to the same limitations on personal growth and family prosperity. Those who lack personal initiative will fail the test of ongoing prosperity; and those who have it will succeed. It is true enough that opportunities here appear to be in more abundance than in other nations but appearances can sometimes be deceiving. One concedes that the answer to that conundrum still depends solely on your willingness to make success happen no matter where you are or what is happening to you. Given the truth of that, the question becomes more about you than about what America might have to offer you and your family.
I wish you luck and good fortune in whatever decision you ultimately make and I hope you will consult with as many who have made such a move as you are proposing as you possibly can before arriving at that decision.
Whether you come to America with your mother or stay in your country of origin, there will be risk of lost opportunity involved. I believe you may be on the right track with your trying it both ways attitude of preserving your green card but remaining at home as it will enable you to weigh both sides of the issue more completely for a little while. Perhaps what you learn in the interim will enable you to become more confident in whatever your decision ends up being.
You can always bring Mom back home if it doesn't work out for her in America and you can always emigrate to America if it doesn't work out for you in your country of origin. When it comes to opportunity, however, more is lost by indecision than is ever lost by wrong decision. Get busy. The future of a lot of folks you seem to genuinely care about is at stake. The way to make your dreams come true is to first wake up and smell the possibility of roses.
I believe in you. The task at hand is now to get you to believe in you -- America or not!

If you don´t like the country you won´t be happy, you won´t be able to find a job or friends, so better go back to your homecountry, with your wife and kids, I´m sure they don´t like it here either.
Your wife and kids need you, your mother already lived her life.

You cannot live outside the country when you have a greencard, not under these circumstances. America needs to be your main residence. You could try living in your home country and visiting the US but they track when you leave/enter and once they notice it you will lose your green card. I wouldn't recommend it.
You do not have to bring your family to the US immediately, you do have a choice on that. It only takes a few months to get green cards approved for your spouse and unmarried children under age 21, so you can bring them later if you prefer.
