You are correct, age discrimination is alive and well in the job market even though it is illegal. On your resume you do not have to list all your jobs. Just list the last 15-20 years. Experience older than 20 years is viewed as irrelevant even though it ma be quite relevant.
For dates of education, just leave the graduation dates off the resume. Recruiters may state that they need your year of graduation to confirm your degree but this is not true. To verify a degree you'll need to provide either the year of graduation or social security number because schools historically use the SS number to identify each student. If you are not certain call the schools you attended and ask what information they need to verify your degree.
You should also include an "experience summary" near the top of your resume to highlight relevant experience for each position where you apply. You can use the "summary" to highlight experience tat may be relevant that occurred 20+ years ago.

Correct you are. There is no requirement to list dates of education on a resume - so don't. If they really want to know, they can run a background check at the time they make you a job offer, and obtain the info then.
It is also a myth that you must list every job you ever had on your resume. List the last 10 - 15 years' worth, and then just provide a list of companies under the heading "Previous Employment" - or simply omit the really old ones.
You could also emphasize your experience and maturity - there are employers out there who still value those things.
