I think it would definitely considered wrongful dismissal and you could take legal action especially if he fired you. He has no right to weigh you or judge you on your BMI, as that is private health information that only you have the right to provide.

Let him weigh you. If you refuse, he'll fire you anyway, then what are you going to do? sue? no one will take your case, cause he'll lie and say your register was short or something

From my small store of knowledge here is my opinion on the matter:
If you are under contract (which I believe you to be), the job description provided therein would contain details as to whether this was a stipulation of the company at the time the contract was signed. What is written in the contract goes, leaving 3 options. 1.If there is no mention of the 'weigh in' policy it is taken that it is NOT legal to then demand it at a later date. 2.If the policy is written in the contract, then by signing the contract you have agreed to it. 3.If you are not under contract, the manager can do as he likes and, unfortunately there would not be much defence for you.
So my advice is to study your contract carefully (you will have the legal right to see it if you don't have a copy), and be careful of any 'tripup' clauses such as "the right to change the contract at any time" etc...

Models get weighed as well. It depends on what conditions you were hired under. He must give you the measurements you must attain ahead of time so he cannot bias it and fire you at will for not meeting the "requirements."

I think so. A friend of mine worked at Hooters and they took her picture and her measurements when she got the job and she signed a contract saying that they could fire her if she changed her appearance in anyway.
He might be doing it to make sure he's got healthy girls (not underweight), but he's probably just doing it to pressure you into keeping in good shape so you keep bring in good customers.

If it is part of your employment agreement it is perfectly legal. Jobs that require specific body sizes etc. can legally require a person's weight, that and considering weight is not a protected class when dealing with equal opportunity employment. Now on the other hand if he was considering firing you because of you nationality, skin color, gender, or some other allowable reason, then you would have a case, as it stands, get weighed and keep your job. This is the price you pay for working in this type of establishment.

not if it's part of the employee standard like can you lift 50lbs, but it has to be in an employee handbook, and you have to sign it. otherwise, once you're hired. he can't make up the rules as he goes along.

No, it may sound illegal, but the following things are only considered illegal discrimination: discrimination against age, gender, sexual orientation, disability, religion or race. Personal appearance falls under a category in which the employer can specify what he or she wants his employees to look like. Such as in an office you can't have tattoos showing or facial piercings, etc.
It's not fair, but you wouldn't really have a case against him. In Utah, and I think most other states, it's a "Right-to-Work" state. That means an employer can fire you, with or without reason at any time (as long is it's not for legal discrimination), and at the same time you reserve the right to quit whenever you want, with or without reason (unless you signed a contract).

Your employer can have whatever requirements he wants. Discrimination based on color, age, sex, gender, etc. applies to only certain jobs. For example: You couldn't expect to win a lawsuit for gender discrimination if you wanted to be a stripper at a nude male strip club. What if a parapalegic person wanted to work in construction?
Weight is not protected by anti-discrimination laws, although there is an exception to those laws called a bona fide occupational qualification (BFOQ). To use this exception, the employer has to prove that no member of the group that they are discriminating against can perform the job. But once again, weight is not protected by Anti-discrimination laws.
