Perhaps he really isn't. Perhaps he doesn't want to share that part of his life with someone he just met.
On "THe Real World Brooklyn" this year there was a recently returned Iraq vet who wanted to wait to tell people. He didn't think they would understand who he was if they first saw him as a veteran.

I can only think of two things:
a) He comes from a military family and it's rubbed off on him
b) He was in the military, but was discharged under "dishonorable" conditions
I always believe in trusting your instincts, if something felt "off" it's probably for a reason...

Could be he just knows how to carry himself as a man and a gentleman. I am as miltary as one could be as in all of the way but I have freinds who are not. They appear to be the same way but they are the same.... parents taught us how to act, walk and talk.
Plus in life this guy may have just figured it out as to how to look and act like a man with confidence and not look like a slouch.
I will tell you that even when I was single I would leave out the military stuff. Many women judge you for being military and judge you as some sort of blockhead. My wife is fine and understands all now but if I had told her what I have done all of my life she would have run. I could never before tell her the all until we were married.
Say he was/is military. Leave it alone for now and enjoy the fact that you met a guy who is a certain way.
